halfway failed recipe with Bacon

This was ought to be a "Bacon Log" - fried mincemeat baked together with cheese, wrapped and baked in Bacon. Well, it didnt hold up too much after baking.
heres the recipe:
You Need:
- Bacon (we took 36 strips)
- Mincemeat (500g)
- Seasoning
- grated cheese
Instructions:
Weave a Blanket with the bacon. do it in an Up/down pattern (H = horizontal bacon up, V= vertical bacon up)

HVHVHVHV etc.
2. prepare the mincemeat. Mix in spices and seasoing by wish. I personally added 1 teaspoon of Mustard, 2 Tablespoons of Ketchup, Italian Spices, Pepper, Sweet Paprica, a tablespoon of soy sauce and some hot sauce (Tabasco, Sambal Oelek and Painmaker 300k Scoville)
3.roll up the mincemeat in little balls (around 1 to 2 grams) and fry them. its not too bad if they aren't fried completely, we get more treatment later
4.spread the meat on the bacon Blanket. add the grated cheese and by demand some more spices and sauces.
5. roll it up good now, it has to be rolled as tightly as possible! or else it wont hold together (might have been my mistake)
6. Freeze it. You will do this to flip it easier later on. Do thisfor about 15-20 minutes
7. Now its time to bake this son of a gun! Into the oven! We used a gas oven on 5 (which should be 240°)
Bake for around 20 minutes, then flip it. Bake for 20 more
Get it out , divide and conquer!

Yes, it is pretty expensive. So I really only eat it when I go camping, or on special occasions. It is the only pork I will eat...

you could use toothpicks to keep it together while cooking or can bake the bacon a bit first just till it begins to brown slightly so when u cook it all together it crisps up more?

But according to it, the Log should be stable by iself, maybe because of the cheese

Well, we got some Ideas for basic Improvement.
1st: what bookie said: more cheese, or needles to keep it together.
2nd: Dont mix the meat beforehand. Prepare a Spice Mix and fry the Mincemeat as it is (Usually it comes packed grounded = in little strings of sorts) fry them like that and after that put all of them in the Spice Mix and mix them. The spices should stick to the meat now and you can spread them.
3rd: Bigger Carpet (Limited through the ize of your oven)

actually no so failed to begin with... you just over do it..
5. don't roll it tightly.. cuz when you baked it the bacon will shrink because of fat...
and put egg and flour.

Oh gosh... The infamous bacon soap I've heard so much about... xP And does bacon toothpaste even freshen your breath? O.o; The bacon nails look kind of neat, though. :P
