So I bought like 7.5 kilos of pototoes cause they were only 2 pounds, and now I have a big bag of potatoes that needs using up within the next one and a half weeks.
Was thinking maybe some hash browns (recipes welcome) or perhaps trying to make my own crisps. Also used some in a soup.
Any other ideas to use up potatoes?

If they are russet potatoes, Twice baked potatoes, if you never made them here is what I remember how to make them (be warned never actually made them myself but observed them being made by family members on multiple occasions so a online recipe may be best to double check) bake the potatoes initially, once baked pull them out slice them around 2/3 to half way long ways (where desired), scoop them out of the skin but leave the skin and potato where it stays together so you can refill it later, in a bowl put all of the carved out potatoes and mash them. In the mashed mix, add cheese, bacon bits, green onion, and any other spices or add on you prefer personally I want to try a bit of green pepper sometime and mix them together. Refill the the carved out potato skins with the mashed potato mix they will over flow some, put them back in the oven to be baked until finished and all the cheese is melted. Pull out and serve.

I suggested this in your cheese thread but Potato Bake once again.
Potato slices, cheese, some cream sauce and whatever else you want to add then put all of it in an oven, basically. You'll probably want to find a recipe for it online.
Either that or you can have a go at making a potato and mushroom Chebureki. Basically a Russian pastry sandwich(or something like that), tastes like magic.

Bake them and rice them into flour and made dumplings or even pasta.

Potato salad? I'm not a fan of it myself so I don't know any recipes for it, just an idea.

It depends on the potatoes, but you could always use 'em for Japanese curry. If the skin isn't too blemished, you can peel off just the 'eyes' and other rough spots, that way you can get great taste, especially after a proper boiling/simmering period.
EDIT: Average batch of curry (one packet for about 4-6 ppl) usually uses around 2-4 potatoes, depending on their size.

But if you make potato flour then shit... make potato bread. Only sliced bread i buy is potato bread. Less carbs and more dietary fiber i need.

I like to slice my potatoes up into slices and bake them.
Add a small sprinkle of salt after you're done and oomph. Better than those things in bags that you call potato chips!
