Strangely enough, alfredo didnt originate as we think of it today. It was simply pasta with parmasean and lots of butter, you can wiki it if you are curious (the article is rather good). True sauces stem from the 5 Mother Sauces. The current day alfredo is an adulteration of a bechamel.
