Mine are Armstrong old cheddar, which is simply a very tasty commercial cheddar; an italian firm sheep's milk cheese I recently discovered called Campitello, which has a really interesting flavor that's not really like anything else I've tried; and this Canadian sefi-soft cheese made by Du Village called Sir Laurier D'arthabaska, which is similar to camembert, and just soooo good.
What are yours? Do you eat more "fancy" cheeses? Do you have many options where you live?

I love salted Gruyère, the price prohibits me from from eating it very often though. A cheese a bit similar, but only cost 80% of Gruyère is a local cheese called Vesterhavsost, so while it is still expensive it is not outrageously so. Other cheeses I like are: Mozarella (I prefer it fresh), Parmesan, and Port Salut.
I do not like the regular run of the mill cheeses, smelly cheeses or moldy cheeses. It can be argueded that I like fancy cheeses and it would probably be correct.

I have to say sharp cheddar is my favorite. Other than that I don't eat much cheese unless its in pizza or Mexican food.

I know it's kinda boring, but I mostly just eat medium cheddar - it's the cheapest per pound locally anyway, so why not? Cheese is generally too expensive on my budget though, so I buy it for personal celebrations, like acing some extremely difficult midterms, or getting a 4.0 for my classes by the end of each term.
I do enjoy other cheeses, but I can't eat many of them by themselves (such as swiss or colby jack) because of their fairly atrocious tastes in large amounts. I can, however, eat cheddar by the block, for which medium tastes best to me.

Regular American cheese in good. Then of course Swiss cheese is really good, but I think my favorite is Colby cheese.

I just love chewy Mozzarella, though cheddar and edam with crackers ain't so bad either.
I tried Brie de Meaux and the outcome was terrible. Put me off all forms of cheese for a few weeks.

Depends on what it's on. I'm big on food so I have a preference for every dish.
If it's like a Subways sandwich, Swiss or Montery Jack
Feta for pitas.
Blue Cheese for dipping vegetables, specifically Roquefort or Stilton
Marble for crackers and ham. Gouda is amazing too, but hard to get my hands on for a fair price.. :/
Pastas is definately Parmasan and Ricotta
Pizzas is always Mozerella.

One of my favorite every day cheeses is Provolone, but I also like Muenster.
As far as fancy cheeses go, I always love trying new varieties of Brie.
Other favorites include Gouda, Fontina, and Irish cheddar, which is also called Dubliners cheese. It combines the sharpness of mature Cheddar and the sweeter taste of Parmigiano.
French Emmental has a savory, but not very sharp taste that goes great with Prosciutto

White cheddar, yellow cheddar, but the best is Munster Cheese.
Oh man, I made Chili con carne with Parmesan and mozzarella. Fantastico!

I love emmental cheese, but nothing beats a nicely grilled slice of halloumi (or saganaki, but that price...)

Swiss and Parmesan are my top two. Then whatever the hell tastes good. Although i like cheese, the last time i ate any was around 3 months ago...

Made some fresh farmers cheese today. Good with Ritzs or bagels. Sorta Neufchatel with more sweetness.

I don't get too fancy with my cheeses. I usually put sharp cheddar or occasionally Swiss cheese on my sandwiches, but I have a growing love of provolone. It's very mild, goes good with everything, and compliments other chesses really well.

Depends on what I do with it.
American > burgers
Cheddar > a classic staple alone or on/in most dishes
Parmesan > Italian or salads (the fresh stuff not that crappy prepackaged powdered kind)
Mozzarella > alone or in Italian dishes
Provolone > sandwiches
Havarti > a newer favorite of mine for sandwiches
