Doom and Doom 2. Even now, they remain unsurpassed. Sure, a lot of great FPS came out after them, but in terms of replayability (even vanilla Doom never stops being fun) and sheer total fun, none managed to reach them.

I like Project Snowblind, Killzone, and Black Hawk Down for the PS2, Killzone 2 &3 for PS3, and Battlefield 3, FEAR Series, and Call of Duty Modern Warfare 1 & 2 for the Xbox 360

Doom 1 and 2, Half Life 1 and 2, FEAR, prey, Bioshock, quake 4, crysis 2 and deus ex are probaly some of the best FPSs that i have played.

Right now I'm absolutely in love with Tribes: Ascend as I loved the older game, but a best of all time would have to be Half-Life 2.

My favorite Doom mod so far is Brutal Doom. Not only does it make Doom ridiculously gory, it also has some fun gameplay alterations. Also, it comes with some other mods named "Doom Metal", which consists of a bunch of really fucking awesome Doom music arrangements.

Aw fuck, Brutal Doom is so freaking awesome! And the specific instant kills for each enemy! Damn, if there's a way to mix AEoD and Brutal together, do it. You will not regret it!
Also, AEoD is basically this:

My favorite FPS of all time is still Return to Castle Wolfenstein. Between the various enemies and the immense arsenal you wield against them, the game will forever have a place in my heart as the last great old-school FPS game. I'll probably never have as much fun smiting nazis in any new video games as I did in RtCW.
