I think the only time Fable had a good final boss was in the first game, against Jack of Blades. This includes both in the original version and in The Lost Chapters. Sadly, the final boss battles in the following games were all rather lame.
I dont even remember who the bosses were in the later games.

Final Fantasy VII for me. This huge build up, the party was like "OMG, SEPHIROT" the fanbase is like "OMG SEPHIROT!11!" and there was this Bizarro sephirot form with like 9 pieces.... and they all fell to the quadra materia given to you minutes before... and this second from with this supernova move with an huge buildup animation... that doesn't even kill you, just reduce your life really low, only to be washed away by one of your many mega-elixirs... and finally is a one-on-one Cloud vs. Sephirot where I thought shit was gonna get real... but no, it's a One-Hit-KO

Honestly, the biggest Boss battle disappointment I had was Sephiroth. Maybe I over-level my characters, but I just back-hand him every time I play through. The first time though you know...after all the junk we had to go through to get there, I thought he's be tougher.
However, in the opposite regard, the dragon you fight while trying to get the black materia screwed my day in every time XD
The thing I really can;t stand is scripted Boss fights, where you have to do certain things in sequence in order to win, because then it;s a puzzle and not a fight. I'm not against dynamic things helping to make a boss easier, but when all else fails, I should have the option to just shoot it repeatedly.

Well I just finished Skyrim last week, and I found Alduin to be a bit of a disappointment...then again I probably should have tried to finish the main quest a little sooner, rather than being at maxed out level.......I just go too distracted with the side quests......

Me and 3 friends bought Magicka over Thanksgiving break thinking we wouldn't beat it that week, turns out we did...in 3 days, and that final boss...we just combined lightning, fire, and arcane and fired a 4 prong blast at it til it was dead

Metal Gear Solid Two, it was so fucking hard. I had to have it on the lowest difficulty setting and still kept getting killed. Then fighting Solidus at the end was so fucking easy.

Hmm, maybe the final boss in Final Fantasy 7 which is Sephiroth, Omega weapon is so much freakin harder. i've tried for about more than 5-10 times. while sephiroth took only 2 turns.

Shuyin from Final Fantasy X-2. Maybe it's just that after clearing the secret dungeon in Bevelle (Via Infinito, was it?) every boss seems easy, but he was truly a crappy one, only low-powered physical attacks and low HP definitely don't make for a good final boss.

Sophie Pethos from Xenosaga Episode I. That damn thing was so damn easy to defeat, I'd swear to god that Albedo should've been the final boss. I didn't even need to use the Erde Kaiser on that shame of a boss, let alone heal.

Well, I've been working my way through the Assassin's Creed games lately, and I have to say I was very disappointed by the end boss in 2. I remember the boss in one actually being a pretty tough fight, he did a good deal of damage if you slipped up, and he didn't really give much room for error in the fight in general.
Compared to that, the fight with 'The Spaniard' seemed like any other fight in the game, and I actually had to hold off on fighting him and just dodge around for a while to hear all the dialogue, I had him on one health square before they had gotten through even a few quips.
Hopefully Brotherhood doesn't disappoint.
