What I want to see is a new 2D castlevania, something to rival Symphony of the Night. The game I imagine is a game with a powerful story like Castlevania: Order of Ecclesia (The ending made me cry, no lie), great music like SotN, visuals like Shadow Complex, and just the simple but excellent fun that SotN had. With the power of PS3 and 360, just imagine how good the quality of the visuals could be, how large the game world could get, the number of paths/enemies/items/secrets.
Not sure what I think about the 3D Castlevania in production, I haven't seen enough on it but I'll give it a chance. But an epic 2D adventure to give SotN a run for it's awesomeness is one of my dream games. Shadow Complex is what I have in mind, but it was too short, and it just wasn't Castlevania.

Another Jet Set Radio game would be great, I love the stylish look and rad soundtracks.
A continuation of Shadow of the Colossus could also be another masterpiece, there's still a chance for this. I really hope the planned SotC movie dies, though.
Persona series and Half-Life series are a couple others I would also love to see more of.
