Indeed, I've come across a few of those and have had no fun in those matches. The fireball spam I can tolerate but I have no idea what to do against Susanoo.
Also, what should one do against the fox's chakra cannon? It seems to be timed perfectly to fire again as so as you stand up. Blocking isn't an option, nor is trying to dodge. I once had near full health and got cannon spammed because I honestly don't know what to do against it.

Well for Susanoo, the only good thing I know of is that Itachi's life must be really low to use it so it doesn't take much damage to kill, and he's unable to KnJ so if you have Hidan on your team he can use his entire support combo to injure and slow Itachi down. Best way to go about it is just keep moving and attacking at a distance.
As for the charkra volley, the only way I've been able to deal with it is immediately start rolling after being knocked down and ninja movement directly after getting up, I've been able to dodge it that was a few times, not entirely reliable. And the other(my favorite) is just having Pain for Shinra Tensei, timed right it stops all three shots and gives you enough time off the cool down to get moving before it comes again.

Thanks for the advice. I might try pain. I was using hinata and tried to use her chakra+B move but couldn't get it quick enough. I'll try avoiding again next time.

As for Hinata, I've never really fought to many of them.
@Hale: Pain still has some start up time with Shinra Tensei so there still a chance you'll get blasted unless you've used him enough to estimate the amount of time it takes between start up and the barrier going up. It's not long but it's enough to screw up your timing against something that moves as fast as the chakra volley attacks.
EDIT: Although the startup time for Shinra Tensei while in the air is almost 0

Indeed that strategy seems to work against Itachi. I'll keep the upper hand during the fight and be relatively passive. Then the moment Itachi can use Susanoo, turn very aggressive and don't give him a chance. Seems most people aren't ready for a sudden change in fighting style near the end of the match. I imagine this won't work when I come across someone who is prepared for it or who has the proper support to give him time.
Haven't fought another good fox to try out any strategies.
I really wish there was a way to watch recorded battles. There are some great moments that I'd want to relive, some great battles (some won, some lost) that really got my adrenaline pumping.

Another good way(not exactly easy though) is to simply wear an Itachi player down until he is just above the mark to use Susanoo and just hit them with an ultimate completely writing Susanoo out of the equation. Not the easiest to do but since his awakening requires him to be so low on life you can easily kill him and never have to fight Susanoo if you can hit the mark at the right time.
