Since my PC is rather weak, i can only advice some oldschool RPGs. And it so happens that oldschool RPG are much much better than the new ones lol.
Here's my list:
Septerra Core
Anachronox
Baldur's Gate 1,2
Icewind Dale 1,2
Neverwinter Nights 1
Fallout 1,2,Tactics
Arcanum *forgot the full name but you won't miss*
Deus Ex
Diablo 1,2.
Dark Stone
Enclave
Those are the best choices that i never forget about.
If need more, i'll have to think about that some more.
P.S. You can pretty much DLL all these games at this point but, you can buy them for <=10eur price each. Your choice.
EDIT: There is also a hidden gem, a Russian game called "Evil Islands" some people refer to it as Allods 3 or "Rage of Mages 3 for some real oldschool players" you can find it in English complete with English text and voice but, Russian voices were so damn good in it that when i heard the English ones, i was a bit disappointed. And yes, Allods online is supposed to be a sequel to Evil Islands made by the same people.Although it doesn't even deserve to be put on the same level of awesomeness as Evil Islands.

That's a beautiful list. Also worth mentioning might be Recettear & Chantelise, two adorable doujin RPG's you can grab for a few bucks on Steam.

The Witcher & Witcher 2, Avernum Trilogy, Ultima, Planescape, FFVII (re-release soon), System Shock 1&2, Thief, KOTOR, VtM:Bloodlines, Bastion...and Human Revolution is worth checking out after the original Deus Ex.

True, but the original Deus Ex is graphically ancient, has bad voice acting and is a lot harder/more complicated, so it'd probably be more sensible to play it first. Otherwise you might think less of it afterwards.

I pretty much agree with what pozertron and doswillrule said (although Thief isn't a RPG). There are also the two Rage of Mage games (which Evil Islands is based on), which are quite fun too.
I also recommend the classic series Might & Magic (especially 4 and 5, which can be combined to become one big game) and Ultima (especially IV and VII and the Ultima Underworld games). There is also the Quest for Glory series, which combines RPG with Adventure gaming. It's quite unique and a lot of fun, with interesting settings, many possible solutions to riddles and a lot of humor. The second game can be very frustrating, though. The fourth game is the best one.

The Witcher 1 and 2
Kingdoms of Amalur (Shame it was released at the same time as Skyrim and ruined the company)

It can get really boring real fast, there are no reason to levelup since there is nothing to be prepared to no secret bosses and stuff, NPCs are mostly just *go kill that, bring me this, my wife is seeing another go investigate etc etc*
If you want an RPG to actually enjoy, you might need something that has IDEAS in it rather than just open world with nothing to do except jump down from high places.

The funny thing with Skyrim (and the entire Elder Scrolls series) is that non of them are really genuinely "good" games. But they have elements that can make them really fun, but only until you get weary of them. Especially the combat is very shallow and boring (try playing Demon's Souls just after Skyrim, the difference is really jarring). Basically, they are like MMOs, with nearly all of their bad points (not that I know what could possibly good about MMOs, mind you).
If you prefer JRPGs, Septerra's Core and Anachronox would be good. Both are western games designed after Japanese ones (the former even has an anime-like character designs, although it looks pretty bad).

It's great that XSEED is taking the initiative to release the previous Falcom series, can't wait for more. The previous RPG that I have played recently and actually enjoyed was Bastion on the PC. I'm hoping for newer titles with challenging missions that give that " I did it " feeling.

Cthulhu Saves the World and Breath of Death VII are both hilarious and pretty competent faux-classic JRPGs.
Also worth checking out the third Penny Arcade On The Rain-Slick Precipice of Darkness if they tickle your fancy.
