Also, Skyrim > Demon's Souls. The answer is so glaringly obvious that any moment I spend thinking about it would be time horribly wasted as the same conclusion is inevitably reached.

Only problem I have with games like Skyrim and large world games is if I stop playing it for a while then come back I feel like restarting cause I got knew clue what I was preparing to do or what I've been doing with all the things to do.
Dark Souls doesn't do that to me.

Skyrim is big...big and empty with no real challenge, and is easily forgotten *since nothing really catches your eye except for good visuals* Same was with Oblivion and Morrowind, i don't remember anything that happened in those games since it seemed so unimportant.
Dark/Demon Souls on the other hand, always keeps you occupied be it challenges/puzzles or Grind/coop. I still remember when i first killed the first boss in DS like it was yesterday. I already played for about 400 hours in Dark Souls and i never got bored, not even once. There is always something to do, someone to kill, something to talk about on forums.

How can you even compare these games, one is a Sandbox RPG, the other is a Action RPG. They're two good examples of how diverse the RPG genre is. The games are structured completely differently. The developers focused on different aspects of what makes an RPG.
It'd be like comparing World of Warcraft to Tales of Abyss, really the only thing they have in common is having similar settings. My vote is for neither, since i happen to own both, and they both have a place in a gamer's arsenal.
