Actually, I agree with you. It was never easy for me to play games on multiplayer before since my internet is slow a lot of times, so sometimes Id only be able to play on single player. I havent even been able to log in to PSN for the past couple of months, so Im forced to play single player.
I must say, playing Demons Souls without any online features sucks, though.

If the game has fun and top-notch gameplay, even the lack in story can be forgiven.
If the game has top-notch story, characters, enviroment, atmosphere but lacks on gameplay, it's propably still pretty cool.

Oh snap, I just had this dejavu moment. I remembered the time I used to play Soul Calibur 3 with my friends during school lunches. It was so fucking awesome.

I'd go to my brothers place with like 5 people and pass controllers around for hours playing Soul Calibur. I think my record was going around the room 3 times before I gave it up to get something to drink. Good times. I didn't have a favorite character but I liked playing one of the girl twins or voldo. I really like the feel of Soul Calibur over other fighting games like Blazblue or Street Fighter.

I find that multiplayer is usually a good thing. L4D is stale as hell if playing solo, the same going for Borderlands or SSBB. yeah...

These aren't really "trends". These are more like consistent problems with the industry. Except for "unskippable cutscenes" ... they're more of a case-by-case basis kind of thing.

Unskippable Cutscenes, I swear in the days of PS2's and Gamecubes you could skip every single cutscene, these days games make me go through them as I cry to myself over how bad the cutscenes are, how bad the story is, and how badly I just want to play the bloody game!
I don't have a problem with bad cutscenes in general, just don't like it when i'm forced to sit through it.

Whenever I have a bunch of cut scenes in my games I just go get a snack for something to drink while I'm waiting. Or I do laundry on those days and when there are cut scenes I just move the loads and fold my laundry. I even played other games on my DS, GBA, and iTouch while I've been playing Mass Effect 2 since it has some scenes that can't be skipped.

I don't mind them being unskippable the first time - especially when they include story-related information. But already in the first Mass Effect there were a couple of cutscenes just before battles, where I had to watch the scene again and again after dying. Really made me wish I could skip them, too.

I will probably be alone in this, but it feels to me that most games coming out now (big titles, at least) are trying to be more like movies than games. I like that there is an emphasis on the story, but it doesn't feel the same. It used to be that when you played a game, there was a clear health bar, and now, it's like it's taboo to put something on the screen besides the character and environment.
I may be wrong, however, since I don't play any of the big titles. (All I have is a PS2 and a Wii, after all.) But from what I've seen, the current state of gaming isn't where I want to be. I like anime characters, not people that look like they could walk out of the TV and exist in our three-dimensional environment. I like having health bars and similar things on the screen.
