FFVII is one that I've always been holding out for...one day....eventually.....they may just do it.....
Legend of Dragoon was an awesome game that deserves a remake too. I really do regret trading it in, didn't realise what a gem it was till after.
Besides those two there are few various titles which have already been mentioned. X-Wing/Tie Fighter etc.

FFXIII, the orginal had a great story but the gameplay was horrible. Plus they should make it open world like most rpgs today are.

The game has potential , but somehow wasted by repetitive gameplay and one-liner story .. Altair's inability to swim is kinda bugging as well tho

The "old" Seiken Densetsu (Mana) games. Go back, play, and study the Seiken Densetsu games from Final Fantasy Adventure to Legend of Mana, and make another game like that. Everything after Legend of Mana (and I might even actually argue after SD3) has been either wasted potential or just plain shit.

Heart of Darkness. There is a indie game that was made recently titled Limbo, that greatly resembles it, in the sense that the main character is a kid, and should he die, he is killed quite mercilessly.

Bushido Blade Series - Started and ended on the PSX from what I remember. Very nice system. Realistic sword fights.
Xenogears - It was one of the games at the time that really went up and beyond when it came to graphics, story, gameplay etc. As long as they "don't change what's not broken" and simply enhance it with todays tech I think even the new generation will enjoy this epic RPG.
Oh and I know about the Xenosaga Series. This topic is about REMAKES, right? ^_^
Trap Gunner - Action / Platforming game for the PSX. Very cool concept. It's not just a run-and-gun type game. The guns don't really do much damage. If you really want to win you'll want to be good in setting up traps and avoiding them as well.
Xenogears - It was one of the games at the time that really went up and beyond when it came to graphics, story, gameplay etc. As long as they "don't change what's not broken" and simply enhance it with todays tech I think even the new generation will enjoy this epic RPG.
