*sigh* since I work in a restaurant that pretty much serves some of our signature foods, I guess I'd have to go with some gorditas and freshly made horchata. We have pretty good gorditas -_-.

a gordita is pretty much a taco with a different shape and slightly different taste. Corn flour and tomato sauce, plus secret spices (salt) go into its creation.

Curious and Wondering
In the Philippines, my fave traditional food is called "Pinapaitan Kambing", accordingly translated to English as "bittered goat". It's an Ilocano recipe usually made with goat meat, goat innards, a few slices of beef meat, spices, and green enzymes from the goat's small intestines.
Traditional drink I favor would be "lambanog". It's another version of palm wine, but it's from coconut. Quite as intoxicating as Chivas Regal.

My favorite traditional food from my hometown :
1. Pecel. (I don't know the English, so just call it "Pecel") :)
2. Gado-Gado. (Indonesian Mixed Salad)
3. EMPEK-EMPEK !!! XD
Pempek or Empek-Empek is a delicacy from Palembang which is made of fish and sago. Pempek is eaten together with a dark sauce called cuka or cuko. Cuko is produced from adding brown sugar, chili pepper, garlic, vinegar, and salt into hot boiling water.

No. I mean we cook it straight away. Not storing it in the freezer or fridge.
