Overnight Method to Make Sour Cream
If you'd prefer to have a little more control over the sour cream, here is a way to make it overnight.
* What You'll Need
* 2 cups light cream (like half and half)
* 3 tablespoons buttermilk
* Canning jar
* What to Do
1. Sterilize a canning jar in boiling water
2. Pour the cream and buttermilk into the hot jar.
3. Cover the jar tightly and shake to combine the ingredients
4. Keep at room temperature until it reaches the desired thickness
* -A higher percentage of butterfat in the cream will produce a thicker sour cream.
5. Stir before serving.
6. Store in the refrigerator up to three weeks.

I am asking this because here in Brazil finding sour cream is impossible, but have you tested those two methods? If so they really work and get close to purchased sour cream? Specially the second method since is easier for me to get the ingredients for it

Never tried either. The first one is on like 15 recipes online. I prefer using Greek yogurt and adding lemon juice and a little vinegar. Or if greek yogurt isn't around then plain yogurt and a coffee filter and let it drain the liquid. remember plain and not vanilla. Plain yogurt is sour.

Plain yogurt is sour.I am already making yogurt here for a couple of months now, way cheaper than buying the stuff in the same amount. So adding the lemon and vinegar to the yogurt, you let it rest for a while or just eat/use straight away?

Usually right away. I heard the lemon curdled it more after a hour.

I heard the lemon curdled it more after a hour.I added lime juice to the strained yogurt and it didn't curdle, for me it wasn't much of a surprise, earlier experiements showed me that at least the yogurt that I am making, can't speak for all of them, didn't curdle with the addition of acids as lime juice, juices with vitamin c, it has been hours and no change in texture. Just to refresh, I added half a lime worth of juice into a few hundred grams of strained yogurt, which according to wikipedia, is what greek yogurt is, oh yes, a couple of tea spoons of salt too, since it will be eaten savory.
However, honestly, not having what to compare the taste with, I can't say, 'That is sour cream.', still tastes good though.
