Okonomiyaki success~! <3

So I've been raving about okonomiyaki (basically a "cabbage pancake" originating from Osaka) to my friend for a while now. He had become intrigued, and also has a gridle-like stove to cook on. Which is PERFECT! :D
So over the weekend we gathered the ingredients.
WHAT NEXT:
1. Mix the flour and water in a large bowl together until there are no more lumps.
2. Add the cabbage, green onion, and tenkasu and mix...but don't over mix.
3. Oil the gridle/stove/whatever and heat to about 400F.
4. Split the mixture into two, large, round okonomiyaki patties. It will be a bit thick.
4. Cover the top of the okonomiyaki with the bacon slices and let sit for 3 minutes, or until bottom is browned.
5. Flip okonomiyaki so the bacon-side is down and let sit for 4 minutes, or until browned/bacon is cooked.
6. Flip the okonomiyaki one more time, so the bacon side is facing up again and let it cook for another 3 minutes. The bottom would be firm/well browned.
7. Place on a plate and DRIZZLE THAT SHIT WITH DELICIOUS OKONOMI SAUCE AND KEWPIE MAYO. Sprinkle the aonori and katsuoboshi flakes on top.
Done~! <3

Fucking delicious.
And Okonomi stands for "what you wish" so you can pretty much add different meats, veggies, whatever you want and it will be A-OK.
I found the flour, bits/flakes and specialty sauces at a nearby Japanese market.
But if you don't have any of these badass stores near you, this site has some fancy bundles of joy.

I am going to try thisYes! Its super easy!
My friend was pretty nervous, especially because we made the patties pretty big so he had to use two spatulas to flip each one...such an intense moment! >__<;
But its really difficult to mess up this one.

I actually had the Hiroshima style when I was in Osaka! It is delicious <3
I'm sure my friend will be up to the challenge.

I like the Gomibako okonmiyaki myself. Which is everything in one pancake. Bacon, eggs, ham, natto, peas, corn, what have you.
