Kitchen Nightmares USA is so overproduced and over-dramatised...it's still entertaining, but that annoys me to no end.

the first ep this season with the hot potato cafe seemed like they had dialed it down almost to UK level but after that, ho ho, nope.
the one last night was unbelievable. no matter what he did, 2 million in debt? no way they're getting out of that, it doesn't matter how good your chef is.

So I was watching Masterchef (not Masterchief) the other day and I was looking the food people made. It looked delicious but the judges just critiqued the hell out of most of them.

I've only watched the original UK version, which has a vaguely picky Australian and a jolly, fat Englishman (and no dramatic back-stories...I guarantee the US one does), but isn't the point of it to heavily critique their food? These people are meant to be the pick of amateur cooks, competing for their own restaurant.
Gordon Ramsey is a dick, albeit an entertaining one, but he does know decent food, and whether the stuff they're making looks good or not would have no bearing on its suitability and quality in a restaurant. You also can't cry whenever someone criticises your food if you want to be a restaurateur. :P

Believe me, it's easier than you'd think. Or just a couple of times, I ran into really horrible chefs.

You speak to me as if I don't cook a lot. Their's a reason I should be Mod for here. Usually people fuck up steaks because they start the cooking to hot and sear the meat while not getting the inside hot or they don't have the grill hot enough and it cooks but doesn't give it a good sear.

Sorry if you have taken it the wrong way. Actually, I probably phrased it wrong anyway. I've seen a lot of people screw up steaks, so I assumed it is not as hard to fuck up as it appears too, especially since one of them was a chef in restaurant of some renown.
I'm sure that you wouldn't fuck up a steak, and that others who actually know what they're doing won't as well as long as they adhere to those rules...but if they forget it about it (for whatever reason) it actually seems easy.
Or it's just me, because in all honesty my cooking is bad anyway, and I generally don't cook.

all of Chef Ramseys shows in the U.S. suck imo. If you get BBC channel try to watch his show called The F word. He takes regular people who have no culinary experience and has them cook 3 course meal for 50 people. each course gets rated on if the customers would pay for their meals and the team with the highest score comes back on the last ep for the season to cook one more time. Also each season Chef Ramsey raises a protein in his back yard and then uses it in the final dishes in the last ep of the season. For example, he raised two pigs and for one of the pigs he added a cherry beer to its diet to see if it would have a different taste to it.
