GDDR is used more for high-end graphics cards since some cards need higher RAM than what the normal motherboards come with.

Graphic RAM (GDDRx) is optimized for maximum transfer rate, and tends to have pretty bad latency figures, as they don't need to be that responsive as usually they're just pumping data to the GPU as fast as possible.
Normal RAM (DDRx) on the other hand has to support multiple programs running in the memory where data is constantly shuffled, loaded, moved to swap, etc. so latency is a lot more important.
