Most archive managers are capable of extracting IMG files. WinRAR is a good choice if you're using Windows and PeaZip is good if you're using Linux and prefer a GUI client. I'm not familiar with OSX applications so you'll have to ask someone else.
From what I imagine, you're looking to install whatever is contained within the image rather than extract it to your drive. Daemon Tools Lite is a program for Windows that is capable of creating a virtual CD/DVD drive on your computer and mounting various image files. Once the image is mounted, if it includes autorun information, you should see an installation menu/prompt appear. If it doesn't include autorun info, you'll need to navigate to the virtual drive and explore it's contents, usually the installation can be started via a file named setup.* (where * is the file extension, often exe or msi in the case of Windows). If you need more in-depth instructions there are plenty of guides on how to use Daemon Tools on the web.
