I never dig melon pan.. but this does remind me of some pan dulce that im now craving.

Hrm... Why not put the sugar first, then bake it? That way the sugar will melt, and it'll be smeared all over the bread

There is already quite a bit of sugar in both doughs, so I think it was more of a decoration thing.
What did you use for fillings? When I baked mine I found that tuna was really tasty and it made a great hamburger bun, but I dont know what else does well with

It's sugar in both doughs. It's just for decoration.

I've heard to the melon cream filling, but not sure whether its in the bread dough or between the cookie dough and the bread dough. Also I vaguely remember that you could also use melon juice in the dough.
That being said, please correct me if im wrong though, I remember that melon bread is called that due to it looking like a melon (or the pattern does at least). I think in China they call it pineapple bread or something. When I bought some in Nepal, they just called it Japanese bread...
Also, they are surprisingly good as burger buns, the sweetness really goes well with the meat and the tomato and cheese - I was surprised at how good it tasted - I only used it because I forgot to buy burger buns.
