Ceviche Pagre barreja de marisc= Ceviche of snapper and seafood with included:
Mussels(5)
Squid(5 chopped)
Cuttlefish (1/2 chopped)
Oysters (3)
and Shrimps(5 chopped).
Problem was that the fish market( the only one in town for fifty miles all directions) had no whole shellfish... fuck... so i have to use a their fish mix which the above is... i didn't want mussels or oysters.. oh well. It was made in store with fresh fish... That they sold out the morning of...
Stick with a simple idea and stick with one fish or shellfish or simple mixta of white fish, shrimps, and squid.. you can ceviche any fish or seafood except crab because it has to be cooked to be safe and if you like you can poach the raw items if raw fish scares you... they do it in Ecuador or in my homeland pickle fish. Don't like the fishy smell or taste... leave it in the fridge over night and it mild and mellow.

I'm gonna go a little hard on the dishes.
Your squid is to unevenly cut also the tomato should be concasséd. The spinach looks like it was torn up in your hands when it should instead have been cut up in slivers. Rustic is another way of saying "to lazy to care." The avocado on the bottom plate is good in theory but it's covering up the main component of your dish, which is the ceviche. You don't wanna hide your main dish you want to compliment it. Also I'd recommend cutting the avocado into small dice instead of wedges.

looks ok, the second one is beter looking and it had been even beter if you used onely one avocado on the top and you shuld onely have used the fine spinach "leafs".
But what do i know i onely been in the "industry" for 4 years...
