Lastmousestanding won the contest for April, and this month, he picked a very simple yet timeless cooking ingredient...

As Mousey says, "some of the dishes are nice and simple, as in omelette and French toast, and you've also got all those savoury egg dishes as well, such as Scotch eggs and Egg-drop soup." Feel free to use eggs from any bird species, be it the ubiquitous chicken egg, or the more exotic ostrich egg.

Contest officially starts now, on June 1, 2011 and ends 00:00 PST (GMT-8) July 1, 2011. No entries will be accepted after that time. Voting starts whenever I wake up on that day and will last for five days, after which we will announce the winner. Winner gets mad props, rep from me (and from others?) and the chance to choose the month after next's theme (June winner chooses for August).

I am really eggcited to see what dishes people come up with - I have no idea what to eggspect... Then again I dont eggsactly have the best brain, as Im kinda an egghead... Loved the title (Lay Me) though, it really cracked me up!

ARGH! I made something and I could have sworn I took a picture of the final product, but my camera isnt showing anything! ARGH!

Sadly my Camera is broken so I have no picture to show. But I did do a Brioche dough toast point with shaved asparagus, Lump crab meat, A farm fresh brown egg, lightly fried and served sunny side up with house cured bacon bits(cured in bourbon and brown sugar and smoked with apple wood, makes for a great blt,) A lemon, chive vinaigrette and a bacon powder. Also, since my salmon connection on the west coast came through, I had fresh salmon to smoke and did a smoked salmon eggs Benedict, with a heirloom tomato hollendase, creamy stone ground grits,and used Anson Farm Brown Eggs.
