Bacon Egg Cups [5/24/12]

Cooking Utensils/Appliances:
- Muffin Tray (6-12, if you are making 6 muffins in a 12 tray, space out the muffins like I did to ensure even cooking)
- Skillet or Baking Tray (depends how you want to cook your bacon)
- Tongs/Butter Knife (or table knife)
- A rolling pin - or a Round Can - or a Hard Cover Book
- Oven (be it conventional, convectional, toaster - as long as it fits the tray you are good to go)

Actual Food Ingredients:
- Butter/shortening or Cooking Spray (I used cooking spray)
- 6 Pieces of sandwich bread
- 6 Large Eggs
- 6 Strips of bacon
- Salt and Pepper

- Preheat the oven to 375F

- You have your choice in cooking the bacon, either in a skillet or in the oven on a baking pan - *Just make sure you don't cook it the whole way through since you will be cooking it more later!*

- Set the cooked bacon aside to cool

While the oven is preheating:
- Spray the muffin pan with the cooking spray or rub with butter/shortening *Make sure to spray each canal even if you aren't using all of them)

- Flatten the sandwich bread slices - I used the cooking spray can as a rolling pin and put the slices of bread in between folded wax paper.

- Place the flattened bread slices into muffin tray, making sure to press them down to form the 'cup' shape

- Place the bacon within the bread cup - your choice on how to do it, you can either cut the strip in half and criss-cross it in the bottom of the cup, you could flatten it around the edge to make a circle....just get the bacon in there the way you see fit. I went w/ the circle.

- Now crack one egg into each of the cups

- Place the tray in the oven and let it cook for 20-25 mins - if the egg whites haven't coagulated or turned white let it cook a little longer.

- If you want the eggs to be runny still, shoot for the 18-20 min mark

- Remove tray, and use tongs or knife to remove the finished cup.

- Sprinkle salt/pepper on top and enjoy!
