There are lots of good legends in Mexico, I remember one involving a trucker as well, that in the middle of the night saw an old lady on the side of the road, because it was very late and the lady was very old he stopped the truck and asked to take her to her destination, she was going to the nearest town to pay a visit to the local church to pay a "manda" some kind of promise made to a saint in order to gain some favor, He transported the lady on the back of the truck, and when he reached the town he went to tell her, but she was nowhere to be found, on her place were a bag full of human bones that he took to the church, when he was told that this happens a lot, the lady died before she could complete her promise of visiting the church and her spirit wanders on the road still trying to get there, The bag with bones they said disolves every afternoon, and the unending circle of the apparition starts over.

there is a story, it varies from country to country in Spanish speaking countries about a woman who was washing her clothes on the river, using stones like people use to use long time ago, she had her baby on a basket next to her, her baby was crying nonstop, her anger kept growing but didn´t stop washing until a moment she hit that baby with the rock on the head, once she realized what she did, she let the basket go with the river, and the legend says she is punished, crying along the river, at nights, if you are nearby a river and hear somebody crying it could be her...
"La LLorona" (the crying woman)there is many different variations of this story,
another one that I remember, in my city small town called Merida, Venezuela, that is heard in all the taxi drivers, around 4 am they will find a young girl that ask to be taken to the north of the city, once they get there the girl will say "can you wait for me here? I forgot the money at the house", 1 hour maybe 2 hours later the drivers will knock the door after 5 minutes a old lady will come out and once she is asked about that girl she will reply "I live here by myself", and if the taxi driver is paying attention, they will see a black and white picture of the girl, they will ask the old lady and she will reply, I am sorry that is my niece she died 20 years ago.

I've also heard of "La Llorona", but didn't know it variated in the actual story (saw a video where they tell what supposesively happen, and they have a suvivor)
From what I've been told, people who used to have a burried treature, they made sure that if someone ever try to take the hidden treature away, they would leave like a belt or some sort of object and create like a defensive barrier around the treature (belt = snake). So treature hunters would need to performe a chant to break the barrier away before they could open the safe or else a creature would attack them.

color=#9D0A0A]actually "la llorona" is the mexican version from the lady in white from usa, only that in mexico it is said she appeared years after the spanish conquest over the prehispanic cultures because she was a indian, that betrayed her family and joined the spanish to conquer the country and thats what happened with her[/color]

2nd legend: in mexico, lives some kind of bird well known as a "tecolote" (some kind of owl), well it is said that, if in the night appears one of those in your garden and start singing (like a bird of course) you MUST take him away at any way no matter what, cuz it is known as a cursed bird and if you cant take it away from your home, someone in your family will die or dissapeared in time of a few days
ILL TRY TO SEARCH MORE STORIES IN MY COUNTRY MEXICO

I believe one you're missing is the legend of the Chupacabra (I'm not sure how it's spelled). I believe it goes something along the lines of a kind of monster, or demon, sucking the blood from goats and cattle. Kinda like a vampire. Though it varies in other countries as well, the legend originates from hispanic origins.

From what I've heard, what has been found, were hairless coyotes.
The loss of fur was caused by some sort of infection, mange, IIRC.

3rd legend that a friend of mine lived:
he worked a time in the subway, at midnight turn in order to repair the broken rails with his friend, one night while they're hitting the rails with his hammers they start hearing some kind of galloping horse in the tunnel, they didnt care about that, they start hearing that sound again when "oh shit there must be a wagon working at this hour" "thats ridiculous, they know we're working here" "then, What's that creeping pair of red lights at there?" "dude, the wagons here doesnt have red lights" then they start running like hell to the next station throwing the hammer's just god know where and when they reach the other station and ask to the security guard he told them that "actually there arent any wagon working at this time" when they return to the tunnel they found horse trails over the place but that trails were flaming...
after that they quit the job
