I always assumed that the way the creature bit into her head was at an angle, so it ended up shaving off a part of her face along with the other eye.

I'm thinking most likely it went inside instead of out. So the meatball fell in and down her throat instead. But in that case is the REAL her death caused from lack of oxygen due to choking on a meatball?

It's more likely that her body went into general arrest from physical trauma, then just choking up. Then again, the blow took off a 2/3 of her brain, so her body probably ceased to function long before the eyeball had the chance to choke her.
