The most complex stuff I have made is home made manicotti (I was stupid enough to make the shells too.)and boston cream pie.
The boston cream pie I'll never do again, I had to make two because the first one I screwed up on. I wouldn't of made another had I not promised my ex something.
I made a huge thing of lasagna once by making my own sauce.
Kung pao chicken too, but that's not hard. Just some soy sauce, sesame oil, rice vinegar, and sugar on cut up chicken breasts and thrown on top of rice.
The only thing is I don't consider myself a good cook because I can't cook without a book in front of me .-. though baking I have more of an excuse with.
I've made the chicken enough times that I don't need the book anymore, but meh.

I've never made a full course meal for anyone other than myself but I've done a few things. Usually I stick to simple stuff since if I'm making food for myself it's likely about 2am and I need to eat before bed but I can do stir-fry and broiled fish (with mashed/baked potatoes/rice and vegetables) and other reasonably easy stuff. I don't bake or make multi-course meals though.

I'm one of those people for whom even failures turn out well screwed up on curry (added the bricks with the water still in it) turned out better than usual with more of it but took alot more when i make ramen i generally add meat eggs and mirin works great with spicy ramen. When i first made rolled omlettes it was almost photo perfect when i cook it almost always comes out well. But so far the most advanced thing i've made was a tofu cake for my moms' birthday this year.

I've never tried anything too difficult, but if need be, I can make some good things. Its just that I've never had to.

Ever since my freshman year in high school I have been coerced into baking cakes for sales. From there I went to cookies, and other pastries, and eventually crossed over into breads. Bread is fun to make, despite the fact it takes forever, and if you screw up, that's pretty much three hours of your life you're not getting back. Still, I'm at a level where I can make some pretty decent stuff, including croissants, which I love.

Need I say more? :D
That being said, whenever I'm not working, I love to experiment at home in my own kitchen and try out new things. Nothing better than improvising on the fly, and having it actually work.
