With a mushroom pan sauce... a pseudo demi glace with out the Espanole(french gravy) sauce usually in the demi... i didn't wanta make a brown roux. So instead i will use the collagen from the meat and bones, since it easier and you could do it yourselves.
Also the wine is from the family winery... made by drunk Catalans because we like good wine... not that crappy french Bordeaux and Burgundy or napa.. Provence and Languedoc-Roussillon are great.. Pyrénées-Orientales is better. also do can sub the wine for more stock.. if you do use the wine... red and something your drink.. never use a wine that you could stand drinking.
Recipe:
Your side can be anything you want:
Baked potato
grill or fried potatoes
rice pilaf
corn
Green beans.
I'm serving it on mash potatoes with the skins fried and the half carrots with the skins fried. Whipped mash potatoes is perfectly fine too.. too creamy for the juicy ribs... if i cooked the ribs dry then whipped is great.

As I said before I'm gonna be a hard critique.
It does looks tasty but you're plating is awful. It's way to dirty and your carrots are uneven and different sizes. As I've said before go for uniformity.
