Okay, so i was thinking of reading/watching something from the Ghost in the Shell media family or whatever you want to call it, but it seems like there's a lot of different offshoots with different plots and I'm not sure where to start. Anyone got any suggestions? Some reasoning behind it would help.

There are three "styles" out there:
-The original manga line
-Mamoru Oshii's movie renditions
-The Ghost in The Shell Stand Alone Complex anime series and a small budget movie. (Solid State Society)
I'd first read the original manga. Then I'd watch Mamoru Oshii's 1st movie first, it's a staple of high budget animation and is more accessible than his later work Innocence. Finally I'd watch the first episode of Stand Alone Complex.
...that way you'd be introduced to all the "styles":
-The manga is often (darkly) humorous, has some slapstick moments and touches all the motifs that the later works build upon.
-The movies are more contemplative, go into heavy philosophy and have spectacular visuals and directions. They're slow, contemplative affairs though, and unlike the Patlabor movies you don't have an investigation and the mystery of "whodunnit" to hold your attention, it either sucks you in or it bores you.
-The series is much lighter and heavier on action. Less is said, more is shown. It's still heavy with references. You get plenty of well choreographed action and even some shavings of humor on top.
The second series is heavier on politics and if you have an appreciation for a study of political process and political realities (...and morals of them) then it could be highly entertaining. If not than it won't entertain you as much as the first series which is much more about a conventional chase of "charismatic" (but "missing") culprit and a study of "his" motives.

I say don't watch the movie. I was bored out of my mind when watching it and had to actually stop. Movie direction improved a lot over the past 15 years.
Apart from the movie i've only seen a few episodes from Stand Alone Complex. It was alright. Animation is superior, but story bored me yet again.

Innocence was kinda awesome in its own way, manga and the movie kicked ass and stand alone complex was . . . . epic, in its own way.

You can't expect everything to be top-tier and I never read manga or watch anime with high expectations. By doing this I can enjoy just about anything to a certain extent. If the storyline and quality is superior then I can become immersed in it, completely losing myself in a different world.
Innocence didn't do that. But I would still re-watch it for it's special moments.
Also, I'm a huge fan of Shirow Masamune and collect his works. Ghost in the Shell SAC is 4th on my top ten list.
