mine would be Krav Maga, it was created to help Jews protect themselves in anti-setimist countries
it is now adopted as the fighting art of the Isralie secret police. It mainly focuses on protecting yourself from an armed assult, gun, knife ect, by any means possible.

I would choose either Taekwondo or Jeet Kune Do. I love both of these martial art styles, but unfortunately, I wasn't taught how to do either of them, since I never took any martial art classes. Taekwondo since I love kicks, and I would love to be flexible enough to do the "moves". Jeet Kune Do because I just think it's an excellent martial art style, not to mention it was used by Bruce Lee.

Though Krav Maga is a very good choice (and if I could choose two I'd select that as well), I think if I could just instantly become a master of any martial art without having to actually train, it would be Muay Thai. As you said, KM is designed to defend you. That's fantastic if someone wants to beat the crap out of me, but what if I want to beat the crap out of you? MT is significantly more offensive than KM and, if I'm a master, then it's going to be more than enough to defend me as well. So why not just go the extra mile and not only be able to defend myself perfectly, but also be able to beat the crap out of others?
Also, one should consider the time it takes to learn these two martial arts. Although to become an actual master would take years and years of training, one can use KM after learning it for about 3-6 months. It focuses more on the body's natural movement, so it's easier to learn. On the other hand, MT takes a significantly longer time to become useful. You can't go out in the street and use MT if you've only been studying for 3 months, with KM you can. So let's say I want to know both and I can learn one instantly, then I have to put actual work into learning the other. Obviously, I'll learn MT the easy way, and work for KM.
That's just my two cents, though.

Tai Chi. And not because it's "waterbending" or whatever either. I just think it's cool and elegant. It seems like something everyone should learn. People who make fun of it because it's "for old people" are ignorant.

I did Kyokushin Karate for about 5-6 years and I really enjoyed it, so that would be the martial art I would like to master.
I think karate is a very good combination of steadiness and speed. A karate fighter will usually try to dodge all the opponent's attacks, while waiting for a chance to win the fight with one well-placed heavy hit.
I like Kyokushin best over all styles of karate because it is the one featuring the most kicks. I am myself rather tall, so it is a good thing if I can make use of the range of my legs.
If any of you want to learn more about this, the movie Fighter In The Wind is a biography of Masutatsu Oyama, who is the foundator of Kyokushin Karate.

La Canne... hands down... it's an offshoot of Savate (also super sexy).
Basically, when swords were outlawed in France, gentlemen (and the rare gentlewoman) started learning how to fight with walking canes.
I like the idea of transforming a symbol of nobility into a weapon.

Pencak Silat. I'm educated in it but not efficient in it. But I do know how to stab someone in the neck with their own knife.

they also used modified umbrellas , but i digress..i guess i really want to master ( russian)combat sambo...I know some moves , but i really wish I could master the art as a whole

Because I believe that there are different principles, beliefs and rules that limit full potential in only one or 2 martial arts.

That's a really hard question. I think i would have to say Jujutsu or Kung Fu.
Kendo would also be pretty cool, it would be nice to know how to really fight with a sword.

On a serious note, any combination of aikido, jiu-jitsu, muay thai, boxing, kenpo/wing-chun kung-fu, krav maga, or combat sambo.
In a sense, it's best to learn the precepts and concepts of above mentioned fighting styles and then see if they fit your fighting style and physique. This, in form, is part of Bruce Lee's philosophy called Jeet Kun Do, i.e. using whatever means or styles it takes to fight in the most efficient manner and take the enemy down in the fastest possible way.
I currently am experimenting with boxing, muay thai, and certain techniques of kung-fu. I take a strike fast and heavy approach that deals the most damage in the the right place. In a sense, I am all about power and technique. As asthma limits my stamina no matter what I do, I prefer to take down enemies with the least amount of powerful and accurate strikes without prolonging the battle into grappling or a faceoff.
... but seriously, I'd like to be able to "ATATATATATATATATATATATA! WA-TA!" my opponents and make them explode.
