Just made enchiladas with rice and beans.
My aunt had already made the beans so I won't be talking about that. I did how ever make the rice and enchiladas.
the rice I used short grain white rice and fried it in some vegetable oil till they were brown. I then added 2/3 cup of water and about half a can of small tomato sauce and let it come to a boil and then kept it boiling till the water was evaporated. Added a little salt for flavor.
For the enchiladas I browned about a pound of ground beef and set to the side in a skillet I fried the corn tortillas till the were flexible but not hard. I had some grated Monterrey Jack cheese and some finely chopped green onion I placed a little cheese and beef with the beans my aunt made they were refried [size=8](so if you wanna buy a can I won't mind)[/h] in the middles and wrapped them placing them on a cooking sheet making about 10 of them. I then poured some tomato sauce mixed with chili powder and added a sprinkling of cheese on top and baked it till the cheese was melted.
I hope you guys are actually reading this. I want you guys to be more into cooking for yourselves and not just eat packaged foods.
Interesting. Although I must say the enchilada sauce sounds a little on the bland side. I would saute some garlic and onions before adding the tomatoes/sauce and chili powder then simmer for 5 minutes or so. Then add some thyme and some chipotle in adobe sauce, simmer for another 5 minutes or so. Also I would garnish it with some fresh cilantro. Also I wouldn't fry the corn tortillas but that may just be a personal preference.
