[TCF March] Mini (Muffin) Pan Pizzas

Ingredients:
Not all the ingredients are pictured here, because I decided to add things after I had taken the picture. My tag thing is next to the parsley, I forgot to include most of it.


-Pillsbury Refrigerated Pizza Dough
-Pizza Sauce
-Shredded Cheese (I used mozzarella)
-Parsley Flakes (optional)
-Garlic Powder (optional)
-Any toppings you want (I used pepperoni and pineapple)
-Muffin Pan
-Pam or other nonstick spray (I used the original, didn't want to add a butter flavor to my pizza.)

1. Preheat oven to 400°F (204°C)

2. Spray the back of the muffin pan with the nonstick spray, but don't overdo it like I always do.

3. Roll out the pizza dough, and cut circles out. I used the rim of one of those red plastic cups since it was a good size. I'm sure the bottom of a can or something like that would work too. The dough is a little hard to press through, so you might need to press the mold down, then use a knife/pizza cutter to cut it out along the line.

Note: Scraps of the pizza dough can be reused to make more, but I found it kind of hard to get it to work with me. I dusted the counter with some flour, which helped a little, but it wasn't quite the same consistency as the pre-rolled dough, and it kept shrinking/wouldn't hold shape.



4. Lay the circles out over the back of the muffin pan.
If you're using the circles cut from the re-rolled dough, you'll have to hold it in place for a minute to get it to stay somewhat in shape.



5. Bake the dough until it's firm and slightly golden brown, roughly 8-10 minutes.

6. Remove the dough bowls from the pan after letting them cool for a moment, and flip them over. Fill with pizza sauce.
I had completely forgotten to get pizza sauce when I went to the store, so I used pasta sauce instead.




Note: The re-rolled dough kinda turned out to be a flop (as pictured). 2 of the 4 were useable for mini pizzas, but the other two were too shallow/misshapen, so I melted some butter on them, threw on some garlic powder, parsley flakes, and cheese, to make mini cheesy garlic bread things. Be creative!



7. If you want, sprinkle some parsley flakes and/or garlic powder.
You can also do this at the end, after adding cheese and toppings. Your call.

9. Topping time!

The pepperoni I got was as big as the mini pizzas, so I cut them into eighths.

Some pineapple for me (I used chunks cut in half, since the store didn't have tidbits):



10. Bake again until dark golden brown.

Note: While baking, I noticed that the pepperoni bits were getting engulfed by the cheese, and I just wanted more anyways, so I put whole slices and a little more cheese on. Also, try to drain the pineapple really well, or squeeze them a bit on a paper towel to get some juice out. The ones with pineapple turned out to be a little bit too watery, but it still tasted good!
