[TCF May] Pasta with Bacon, Romano, and Parmegiana

I got lazy this month, so I made a super easy, throw-everything-in-the-pot type of pasta. I splurged on the cheese though--good cheese is a heavenly thing.

Ingredients:

1lb dry pasta
2 cloves garlic, minced
1 small red onion, diced (I had a big one, so I used about 1/4 of it)
1 carrot, diced
1 can peas
10 pieces sun-dried tomatoes, cut into strips
1 cup romano, grated
1 cup parmigiana, grated
Squeeze of lemon juice
Salt and pepper to taste


Directions:

1) Start the pasta according to the directions on the packet. In a cold pan, place the bacon and fry until it is crisp and the fat is rendered. Drain and crumble the bacon and set it aside.

2) If there is too much bacon fat, drain some out. Fry the onion until it is half clear, then add the garlic in. Add the carrots, tomatoes, and peas in that order and cook until the veggies are tender.

3) Drain the pasta and save a bit of the water (about 1/4-1/2 cup) for the sauce. Put the pasta in the pan with the rest of the ingredients, and toss it well, coating the pasta in the bacon fat. Stir in the grated cheeses bit by bit, and the pasta water, if you want a bit more sauce. Add a squeeze of lemon and salt and pepper to taste. I actually only added pepper because the bacon and cheeses are salty enough.

4) Plate it and top with the crumbled bacon, and grate more parmesan on top.

It kinda looks like spaghetti carbonara which I enjoy a lot.

It really does look dry though. You should've made a sauce to go with it, but that's just my opinion.

Seeing that i love Pancetta and tomato pasta and mac& cheese with Pancetta, i think i might just try this.

wow - looks quite tasty.

Im generally a glutton and whenever I make a spaghetti with a meat sauce, I generally add way too much meat, so its quite nice seeing a properly prepared meal...

Nice presentation as well

I LOVE spaghetti carbonara...It reminds me of my mom cause she used to do it all the time~

And yeah Neko, it looks good, but a hint of sauce would've been great :p
