Your Thanksgiving FEAST!

Ok since most of us US members celebrate thanksgiving I figured why not make a topic about what you're going to have, and quite possibly post some recipes, for your feast.
Since I'm the one cooking certain things this year i for one am only making ham and mashed potatoes. I really dont care too much for anything else on thanksgiviing. and to add to tradition i'm having rice with my honey glazed ham :D

-Mashed potatoes (Garvey is choice)
-Corn
-Macaroni and cheese
-Rolls
And I'm sure that My Other Family members will bring more food as they arrive!

So this Thanksgiving I'll be cooking a turkey for the very first time. I'm basically following this recipe, which seems simple enough. Errrrrr...I hope I don't screw it up. For side-dishes, I'm making scalloped potatoes, my signature carbonara, fried rice, and stuffed mushrooms. I'll probably buy a pecan pie for dessert since I'm not so good at baking yet. No, scratch that, I kinda suck at baking.

I have the luxury of living at home still, with a very traditional and loving family. So I'll get to watch what ever specials are on TV, while my mom cooks and bakes many things (Turkey, ham, stuffing, veggies, potatoes, pies, and cookies), then my aunt will come over with her family and we'll all have a great time.

retamales (catalan type of tamales with beef and chicken)
Pa amb tomà quet (bread — optionally toasted — with tomato rubbed over and seasoned with olive oil and salt)
potato casserole
ralo del otalya(sheep and guts soak in salt and spices then roast over a fire)
and the rest is common american side dishes and deserts on turkey day.

Your stock doesn't have any onions does it? Because if it doesn't it isn't a true stock. You need to make proper Mire Poix which is 2 parts onion to one part celery and carrots then you are only supposed to use bay leaf thyme parsley stems and pepper corns to add a tiny bit of flavor. And I mean a small amount. But your turkey looks really good.

I did put onions in it, but it was just a little bit--around half an onion, chopped finely. I think I did it the opposite and did 2 parts carrot and celery to 1 part onion, lol. The herbs/spices I used were bay leaf, thyme, parsley (dried leaves, coz I didn't have the whole plant), a bit of rosemary, and pepper.
