yields about two dozen

1 cup + 3 tablespoons flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup (one stick) unsalted butter, at room temperature
3/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 1/2 tablespoons sugar
1 tablespoon cinnamon

1.) preheat oven to 350°F. line baking sheets with parchment paper or spray with non-stick spray and put in refrigerator to chill. yes, chill your baking sheet. if you want a soft snickerdoodle instead of what most people get (hard, crunchy ones) then you will listen to me.

2.) whisk together the flour, cream of tartar, baking soda, and salt in a medium bowl. set that baby aside.

3.) now cream together the butter and sugar until pale and fluffy. sing while you do so, and then add the egg, beating well after you add it. beat in the vanilla. lots of love!

4.) stir in the flour mixture gradually, beating it on low speed just until it's blended. don't overmix, and check for flour pockets and any parts that maybe aren't completely incorporated. some of these ingredients have their differences, but they'll fall in love eventually. even if we need to use the mixer to make them do so.

5.) chill your dough for at least thirty minutes! just leave it be, man.

6.) while you're waiting for that to get its groove on, mix together the sugar and cinnamon in a small bowl. as yummy as this may smell, i advise against trying to eat it as is.

7.) if your thirty minutes are up, scoop 1-inch balls of dough and roll in the cinnamon and sugar mixture to coat. you don't want your dough to be cold and lonely. :c

8.) place them on the chilled cookie sheet about 2 inches apart - they need their space. stop crowding over them. D:<

9.) bake for about ten minutes.

9.) if you're baking more, remember to chill the dough and cookie sheets between batches.

10.) let them cool for 2-3 minutes on the baking sheet and then remove them. store them in an airtight container or enjoy warm! vanilla ice cream is wonderful with these.
