I definitely liked it more than the first film, but it does lose that magical feeling the first film had. Mostly because it was the first time a big teamup movie was made and worked.

Mudbox, from what I can tell, is very much like Zbrush. It's a scultping tool, you could start from scratch or bring in a model and sculpt in details. (I would suggest learning to model and rig with Maya and texturing/details with Mudbox or Zbrush *or photoshop if you're already familiar it*.)
You'll probably want to learn the basic controls of the program first though.
Digital Tutors is a great website to use if you're willing to spend some money on training.
As for the laptop question, they have the a list of recommended specs on their site for each program.

FYI, rendering out your model/picture can be very labor intensive depending on how detailed everything is. Your computer/laptop should be rendering and nothing else while doing so. (You'll definitely want a multicore cpu, at the very least 8gb ram(64bit os), and a decent gpu.)
