I tend to only rewatch shows once it's been a while since I've seen them, so that I can sort of refresh my memory about them, and/or if they're particularly funny/good. That I can think of right now, the ones I've rewatched are Shuffle! (at least once) and Carnival Phantasm, which I've rewatched in its entirety once and have rewatched individual episodes from several times. I've been thinking of rewatching Seitokai Yakuindomo (because it's funny as hell) and the Kara no Kyoukai movie series (because it's been a while, it's amazing and because I'm thinking of watching it in airing order, rather than chronological order like I did the first time).

The process of diminishing returns seems to be near non-existent when it comes to Baka to Test. (Just re-finished both seasons yesterday)
Tenshi na Konamaiki retains my favorite female protagonist. (I Sorta want ta play the waifu game for her).
As bad as Kampfer was, I love the assertive personalities of the female cast.
Isekai no Sekishi is still as amazing as when I first saw it, a near perfect balance of all of it's elements.
GTO can never be affected by age.
My opinion is tied between Eureka Seven and Beck as my favorite "coming of age" animes. These I put some time between watches, but I will never grow bored of them.
I'm waiting for the memory of Zetsuen no Tempest to fade a bit before I'll re-watch it, I know I won't be able to re-experience my first watch, but it was so good the first time around, I need to forget some of the key parts.
I just fill so mellow and happy each time I watch any of the Ichigo Mashimaro Series/Ovas.
I'd List Guren Lagaan but the sheer thought of Kamiya.... I'm still not over it.
I'm about to re-watch Nichijou.
The inconsistent airing from CN damaged Cowboy Bebop a bit for me, but that Trigun and Gravegun are three of my eternal favorites action animes.
Outlaw Star is the space anime I hold as the highest standard, I go to that show whenever a new space-themed anime is airing.
I haven't watched it in a awhile, I'll thank this topic for reminding me of it. Next in the list is Serial Experiments Lain, was the second anime I ever seen.
I first became a fan of Makoto Shinkai with Hoshi no koe, ever since I've never been able to forget his name, all of his movies bring me to tears.
Not sure if I finished the anime or the manga of Chrono Crusade, but up there.
I keep procrastinating finishing it but it's about time I try re-watching Azumanga Daioh, again.
Even though it feels slightly outdated, since some of the jokes seem to be observed humor, I can never stop loving Zetsubou Sensei.
Since I'm going on a comedy roll, I'll trow Lucky Star in as well.
Only anime adaption of Kaishaku work I like, was a total strike with me when I first got into watching fansub's, Kannazuki no Miko, probably my favorite Yuri anime (I still have to start on Madoka).
Jumping off Yuri, Yami to Boushi to Hon no Tabibito is second, despite the erratic and confusing story and lack of character development of the main with anyone for longer than an episode. (I really wanted to play the game back in the day, maybe I should try finding it again.) Rewatched it a couple of times, and I think my bias favoritism will never let this one grow old or bad for me.
I've re-watched both seasons of Black Lagoon a number of times, I'll probably re watch this series quite a few more.
I absolutely love Darker than Black (re-watch counter probably at 9), sadly that love only applies for the first season (second season ending... meh~), I still need to watch the OVA's.
I think I'd like to try re-watching s-CRY-ed.
Hellsing, no need to list a reason why.
As some pretentious "know your roots" something or other, I can't bring myself to hate Saber Marionette. (I'm sure loving the word 'marionette' helped.)
I somehow almost forgot Blood+... Shame on me.
Someday I will be able to re-watch Code Geass, but right now.. It's still too soon... Lelouch...
Showing R.O.D. the OVA or the first half of the series, and you'll have me jumping.
I think I like the manga better, but the anime is a well done adaption with most all of the action and depressing (emo) undertone removed, so I'll add Rosario Vampire, which I've re-watched a number of times.
There are a few I can't add since I never got close to finishing them but want to, Jigoku Shoujo, Kuroshitsuji, Ergo Proxy, ect... This list alone is probably just around half of my total anyways, too time consuming to remember them all. I am also glad this was anime, and not manga... The list would be ridiculously long...
Note: Sorry I am using this post to indirectly make up a list of series I want to re-watch.

Darker than Black - I was young and had a low English vocabulary when I watched this so I barely understood what happened
Same thing goes for me when i only watched shows(mostly dubbed) on Animax,my listening skill was equal to zero and got no clue what they were talking about, only following the animation to figure out.
OT:
Read or Die
Yu yu hagusho
Fushigi Yuugi(the very first anime that i made it to final ep)
TTGL(it hard to say that i completely finished since i only watched few eps including the final)
Blood+(unhappy ending really drowned me in many feels not to mention the show itself got plenty of nice OPs and EDs).

[size=14]I have already re-watched a few series, although I haven't been watching anime long enough to re-watch a lot of stuff I will in the future.
I've already rewatched:
Vandread. It wasn't a brilliant anime but it's definitely entertaining
Lucky star. Was a brilliant anime and I've watched it 3 times. I rewatched it the first time because I originally saw it in english dubs which made me wonder what the japanese version was like and I fell in love with this series again.
TWGOK. I have a seriously irrational love for this series. I've been following the manga pretty much since the beginning of it's scanlation and have the first season on DVD. I would buy the rest of the Manga and anime but it's difficult to get hold of in the UK and I haven't really had the money until now. Rewatched it a bajillion times and wouldn't be surprised if I did so again.
Shows I would definitely rewatch:
Steins;Gate. I probably won't rewatch this for awhile seeing as I'm currently playing the VN. That being said the movie is upcoming, maybe I'll marathon it before the release.
Baccano. It was an amazing anime 'nuff said
Usagi Drop. I loved this anime, like getting a warm hug or a pat on the back, plus it's shorter than most.
FLCL. Not for a while but this series is one that I will definitely rewatch, it wouldn't take me long, it's only 6 episodes long.
AnoHana. The only thing that has made me cry like a baby since I was a baby.
Sakamichi no Apollon. If not for the amazing story then I would rewatch it for the unusual Jazz OST.
Black Lagoon. Pure, high adrenaline action at its best.
I'm sure there are others as well but those are the ones I can think of.

I just started re-watching one of my favorite all time series Beck:Mongolian Chop Squad. Still love as much as the first time I saw it!

What I've re-watched
----
Tengen Toppa Gurren Lagann (and I will do so forever and ever)
Eden of the East
Darker than Black
True Tears
Clannad
What I will probably re-watch
---
Baccano!
Kokoro Connect
Sakamichi no Apollon
Tari Tari
And there are others but, I dunno, I don't want to put too many. Makes me feel like I'm diminishing the value of my "favorites" (which may or may not actually be my favorites)
Also, I'd probably put more on here but, a lot of those are also shows I've just watched these past six months or so which is too short of a turnaround time for re-watching, at least in my book.
