Uh, my ideal ending would be Tomoya and Tomoyo's from the Tomoyo After episode.
I don't like endings where we're left to come up with our own conclusion.

Any ending that don't ask me to figure how it ends myself. I never liked the type of ending "Ok, we leave it out to you to decide the ending..."

Well, to get my ideal ending, it has to start like this....
Evangelion, Shinji gets killed by the first Angel that appears in the Tokyo-3 and Rei and Asuka carry on the series, killing all other potential male protagonists who don't have balls.
Thus, sexy Rei X Asuka ending

On the other hand those type of ending maybe fun sometimes, like giving hope to see more and something.
I like code geass to ended like this.

The ending that I would like to see varies and depends entirely on the series that I watch.
NHK ni Youkoso - Perfect, just the way I had wanted it to end.
Black Lagoon - inconclusive, pretty much left open for the possibility of a sequel.
(which indeed it will have, Season 3!) - GREAT!
Beck - had low budget but still pulled off an ending worthy of praise... (on to the manga!)
Cowboy Bebop - It probably wins the best ending category. That's how you end a great series!
Deathnote - It kinda sucked... the manga had a far intense and "realistic" version of its ending.
What I always look forward to every ending is but a Fitting and Significant End. I try to separate my personal feelings of attachment to some characters in declaring if whether a series truly had a good/happy/satisfactory conclusion or not. Gurren Lagann for example; I loved the couple (you know who) although they were rather unfortunate, I can still say that the series definitely had a wonderful finish... and vice versa in the sense that not every series which ended soundly and ideally would instantly mean that it had such a great and happy ending. (I actually abhor such "perfect" and miraculous endings) - Dragonauts & Blassreiter (both Gonzo productions) would serve as a good example in this case.

Depends on how they do it, it could be acceptable. Code Geass is acceptable since we do have the idea what happened to the characters and how they affected the environment/event in the anime. Now, if you watched Zeorymer(old mecha anime), that's the type of the ending I do not like which really dissapoints me considering how good the story is...

Like, Chrono and Rosette don't fucking die when the sun rose. The manga ending was much more satisfying somewhat. (Chrono Crusade)

I want to see Fate/Stay Night on UBW Good ending. No clue why, but I just like that ending in the game.

Kinda overlaps with the 'couple deserving better' topic. Many series separate lovers to give their endings that final emotional kick. You obviously often wish for something different if you rooted for the said couple ... though I must admit that a properly utilized tragedy of this kind often creates the best and most memorable endings.
Some other endings that sucked dead gophers. Practically any other conclusion would have been better.
Mai-HiME
Claymore
School Rumble
Ga-Rei : Zero
Macross Frontier
Probably more to come.
