I've been searching a lot and I see more MKV then AVI so is it that rare?
The reason why Im searching for AVI is for converting to my PSP or Ipod just in case I dont have much time on the go and when I convert MKV it doesnt give me subtitles EVER

I don't think it's rare nowadays. MKV basically gives you much higher quality than the AVI. I haven't found any good free mkv->avi converter though so I can't help you much with that.

really dont have time so I want to put anime on my PSP for the road and when you convert MKV into any other format it just removes any other components like the subtitles

Actually, my freeware Ipod converters just take the first Video/Audio/Subtitle stream. You might just be missing some codecs.
You need all the initial quality you can get if you want watchable anime on a portable device.

so does my PSP converters but the problem is that it takes much too long and the same problem occurs but the codecs I have...well I probably have all of them

You could try WinAVI. It's not freeware, but it can convert just about any file I've run across into Ipod/PSP format.
