It's pretty much completely dead once the pieces are being put on the plate. The taste is fresh but it doesn't really taste very different from normal squid. The tentacles will cling to the sides of your mouth and wriggle around though so it's a unique experience to say the least.

I learned how to make sashimi, but we never used livestock. I've killed animals to eat them before, but only in camp and no other alternatives left, this guy is too pro.

I love animals too much to make them suffer like this (don't know if squids feel pain, since sharks apparently don't).

and I'm not so sure but he probably removed the "teeth" and "brain" at the part where he pulled something off
also in asian restaurants, you pick the live animal and they will cook it infront of you...
it's not for the faint of heart
(I heard in Hong Kong if it's not alive or moving you cannot sell it, or something along those lines)

There are other videos were they pour some soy sauce to the...well what remains of the lower part of the body, my japanese sucks, but I can read some kanji and it says it pains them when you pour this sauce (ghost pain perhaps?), I was pretty shocked, and trust me I've made (still have nightmares about it) frankfurters the old way...
