Hmm... I don't think I said if I wanted to join, just reminiscing of last years... which got me into thinking of how many people actually dropped out of the Secret Santa event.
I could join, but I don't think I could give any really decent gift...

This rule is only there if there are an odd amount of people in the event. It is thought that the person running the event will not participate in the event itself. So, if there were... say 15 people in the event, to make things easier, the runner of the event will join in and make it 16 people. This is to make pairings easier, and a lot less complicated. That way, everyone will only have to do one gift for one person, rather some people having to worry about doing two gifts for two people (one gift each).

To me, it'd be a whole lot easier for someone else to do that. If I were to think about it over again, from a different perspective, it could take me a few days. As of right now, I don't see anything wrong with my explanation.

Obviously you do not "make pairings", it would defeat the whole purpose of it being secret. Everyone will get one person in the draw even if there is an odd number. 15's a bit too big to use as an example here, so lets' do 5.

Okay. I see what made you question the reason to have that rule. I was thinking of much simpler pairings, where you just number the people, like 1..2..3..4.....1..2..3..4..... That's where I thought the rule would be essential to the running of the event. But if you were to do the pairings as you suggested, there would be no need for that rule.
