My go-to meals are omelettes. Whisked eggs in a jug with a dash of milk, add salt and pepper to taste and anything else you fancy in it. Then shallow fry it and flip it when it gets solid enough to flip.
Cheesy omelettes are my favourite but it's hard to tell when the egg hardens because molten cheese looks like runny whisked egg.
