How do you cook corn tortillas for street or taco shop tacos, but not that fucking fried or oil greasy tacos? I try steaming them lightly on the cast iron grill or microwave with damp paper towel but can't get it right like the taco wagons.

This is actually a difficult question to answer because I know how annoying corn tortillas are to work with.

I've only ever done flour ones straight over the flame. my mexican friends had a cast iron piece they used for corn ones. it was just a disc, like a pan with no sides. i can't remember if it had a handle, or if it was seasoned like other cast iron cookwear. they never used any kind of oil on it.

A cast iron griddle would work great actually! Also if you have cast iron you have to oil it, or it rusts.

Ah. I bought some pork skin which they were selling cheap in the butchers. Ill just google a recipe then, but for some reason I thought you had to bake it

Deglazing is when you add a liquid to a pan to take off the bits stuck to it. Those bits have a lot of flavor and when you do it correctly you can make a pretty decent sauce out of the liquid.

I read somewhere that Sous Vide egg is the best way ever to cook egg. I'd like to taste it, but I can't afford that machine. Any idea how I can cook egg just like that but without the machine?

I try steaming them lightly on the cast iron grill or microwave with damp paper towel but can't get it right like the taco wagons.what you need is a stove and A comal(komal)basically a flat griddle i use one with no handle and you flp the tortillas by hand you flip if every 2 minutes on both sides and in the microwave you have to keep them seperated or they stick to each other and the most they should be in is for two minutes it help if you make them fresh with some masa from a supermercado(super market) or a carneceria(meat market) but you can buy a pack for less than a dollar i hope this advice helps
P.S-you dont steam them its like making pancakes w/o the spatula

When I make my wings (without sauce) I usually use salt pepper onion powder garlic powder and cayenne. I than cook them at 350*. It's simplistic but they always turn out well.

I made a cheesecake using coffee liquor and amaretto. It tasted fucking great.
But honestly give me a regular New York style and I will love you forever.
