I'm guessing the best way to make a better grilled cheese samich is to use better cheese. Or at least cheese you like better, I mean.

As for the cheese, Parmegiano and Mozzarella combo works wonder. Or go Greek with Feta cheese.
And i love slices of spinach in my cheese sandwich.

Oooh, I love grilled cheese. I usually add some bacon to mine and dip in some ketchup. It's so simple but really good with a can of soup.
