Well, the peace sign was more a victory of sign way before how it is used now. Winston Churchill, for example, held his two fingers like that as a sign of victory back then and so did a lot of people afterwards.

It is also usually a scene were they are exposed to the one they are cheating on, or something like taking a video of it. It is also often usually the point were they no longer care if they are exposed and is the point of no return. So you could see it as victory over the last hurdle.

Makes sense. They want to be exposed as sex objects/sex toys/sluts/meat toilets for the world to see while shamelessly being proud of it. They have, as females, completely given in to their biological purpose as vulgar animals for reproduction.
