Every single day, normally about 3 times. I walk passed this girl. Red hair, average looking, pretty sweet, and she saying 'hi' to me. She knows my name and asks me how I am.
Being the loner I am I normally answer politely with as few words as possible. This has been going on since September 2009.
For some reason I'm feeling nervous about engaging in a full conversation with her, I know we will be in a situation like that some time. What should I do. She's going to realise I don't even know her name that she'll feel bad and I'll feel bad for making her feel bad when she doesn't deserve it.
Any good techniques to bluff my way through these conversations? There are also a fair few other people who I have spoken to and had jokes with but still don't know their names.
I should really be more sociable, but that would mean cutting down on Hentai.

Ok, serious now, don't you know anyone who knows her? That would help discovering her name.
As for how to "bluff" a conversation, well dude, why would you want to do that?
If a girl like that wanted to talk to me, i wouldn't miss the chance to hit it ;D
Also, i'm into hentai and IRL i think i'm a pretty sociable person. One thing has nothing to do with the other.

dont ask one of her friends maybe someone you know who knows about her...
this happens to me a lot. I tend to forget peoples names if there isnt any constent interaction. It took me a month to remember this guy who i hanged out with everyday.
You could always be honest and ask her name, and how she knows yours. Maybe the reason why she knows your name is because she is talking you.

I've considered a scenario where I ask how to spell her name but I just know she will have a name so incredibly fucking simple or she will say something like "'ie' not 'y'. Or "The normal way". Then I'll seem like an asshole and a retard.

In the whole sphere of things it's not that bad, especially if you tell her that you never really found out her name. Now if she told you her birthday and you forgot, THEN she'd probably be peeved off at you.
