Tofu burgers
1 box extra firm tofu
1 1/2 tbs oil
1 onion *diced and cooked*
1/2 tsp oregano
1/2 tsp basil
1/2 c breadcrumbs
1 tbs tahini
1tbs miso
1 tbs soy sauce
1 tbs dijon mustard
Mash all together and form patties. Pan fry in a little oil.

Welp, it's Day 1 for Fpod and I. We went to the grocery store and bought a bunch of stuff.
Tonight for dinner we're having:

Vegetarian Lasagna
Ingredients:
* 1 8 ounce package whole wheat lasagne noodles, cooked slightly (al dente)
* 1 9 ounce package frozen raw spinach
* 1/2 cup grated Parmesan cheese
* 3 eggs
* 3 cups low-fat cottage cheese
* 3 cups pre-made or store-bought pasta sauce
* 3 cups grated low-moisture part skim mozzarella cheese
With a side salad, and garlic bread.

So after making the dinner, I rate it a 4 out of 5 star of dinners. It was yummy, it tasted just like lasagna.. minus the meat. So if you're a cheese lover, you'll really like it.
However, I made some minor changes to the recipe when making it.
I decided to use fresh spinach instead of the frozen spinach. I picked it out of the salad bag we bought of mixed greens. <_< Why?

I added oregano and other Italian herbs on top to give it a bit more... well something more. If I had the option I'd probably add more veggies to it, like onions or even zucchini.
It's funny because I was sitting there thinking about what would taste good in it while tasting it, and Fpod was sitting behind me and goes 'you know what would be really good in this?' And I ask what, excited to see if he came up with something interesting and he goes 'meat.' Jerk. lol
He wasn't real fond of it, but he doesn't like cottage cheese, ricotta cheese, or even sour cream. So... that was why he didn't like it.

Never been a fan of veggies. And the only way I can bring myself to eat them is either in hamburgers or soup.
Needless to say, facing a challenge like this wouldn't even take off. I'd have to have a really dedicated girlfriend or something of the sorts to make me eat these stuffs.
The pizza-looking lasagna looks tasty though. Good luck on the mission.
