What is your favorite herb or spice?

Whether you cook or not, what herb or spice do you love to have in your food? It can be as simple as salt or pepper or as complex as a bouquet garni.
I adore sticks of cinnamon, especially when there's work to be done, because it reduces hunger and bites enough to keep you alert and awake. If chewed enough, it becomes very sweet. ^^;

I find that garlic powder works in almost every recipe. It's good stuff, cheap, and tasty - I love garlic.

I like finely chopped basil leaves in my spaghetti, doesn't really taste as good when there's no basil in it.
And i agree with garlic, as a stir-fry dish without garlic seems to be missing its soul or something haha.

Sea salt and garlic.
I like coarse sea salt, here in Brazil we have a type that comes in really big crystals, and if you take those and throw in a pepper mill you get a really delicious salt that makes food taste much better. It is great for fries, salads, beef and everything else, I even use it for baking bread.
Garlic gives a really good flavor to the food and I use lots of it in everything that I cook, and I cook a lot, I even put it in breads when I make bread.
Well lastly I am not sure if is a spice, but it can be used to make dips and dressings, it is cucumber pickles, of the slightly sweet type. I know that you can eat it by itself or in hamburgers, but it makes a mean salad dressing.

Curious and Wondering
Chili peppers (the small ones). I prefer the green-colored variety - they smell really great when crushed and used in sauces, way better-smelling and as spicy as the red variety.
I also love mustard. My family keeps complaining that I always drain the mustard bottle dry (I keep using it on my bacon and hotdog alongside sweet chili sauce).

I love many spices though I'd choose Cumin and Fennel seed for the unique flavor that they give to fish and poultry dishes.
