I promised my boyfriend about a month ago that I would make him some of my epic grilled peanut butter and jam sandwiches, today I did. Which made me wonder, who else likes them? What kind of other grilled sandwiches do you like? What kind of wacky sandwiches have you come up with that you absolutely love?

Holy crap these all sound sooo good!! I enjoy grilled cheese and banana with peanut butter as my two grilled sandwich staples.
Another favorite of mine is taking pita pockets and stuffing them with grilled roast beef and cheese of choice (swiss, mozzarella, cheddar, you name it!)

My favorite grilled sandwich is sorta unique, i make something like a grilled pizza, i put mozzarella, pepperoni's, and tomato sauce together and then i grill it using italian seasoning mixed with butter, it's really good and you can even use tomato sauce for dipping ^_^

My absolute ideal sandwich is a brie, apple and pomegranate panini.
I might not work at that bistro anymore, but they still serve it, so that says something.

I used to make grilled ham, cheese and BBQ sauce sandwiches for my wife all the time but I prefer bacon, salsa and cheese.

Well these are certainly unique! Ham and grilled cheese is a favorite of mine.
I have never "grilled" a PB&J sandwich, but I do love making toast and smothering lost of peanut butter between two pieces so the heat makes it all melty. Mmmmm.

It's quite similar, just the peanut butter is more melty and almost sweeter, and the jam gets gooeier :P mmmm thinking about one right now D:

As for the craziest sandwich i've made...not sure. I used to make pizza bagels(Sauce+cheese on bagel),which when done right are great.

Been into making a grilled turkey sandwiches lately (kaiser roll, turkey, Swiss cheese, a little mustard and mayo, bacon and lettuce).

Ruben sandwich, sub kraut for sauteed onions, add pickles, thousand island dip like a San Francisco melt.
Ham and Swiss on rye with kosher sour pickles.
Cuban (enough said)
Catfish po' boy
San Francisco melt (burger on sourdough with pickles, lettuce, tomatoes, pickles, thousand island dressing and Swiss)
I have other ideas, I used to work at a pub that served sandwiches.
Edit:
Roast beef and garlic melt (Cuban bread flat top grilled with a mixture of butter and crushed garlic, inside toasted, filled with roast beef and Swiss, then pressed with cheese on both sides)
Barbeque chicken press (thin French loaf with chicken breast shredded and coated in honey barbeque sauce enveloped in monterey jack cheese, add hot sauce to taste)
Edit: Edit: If you make these for stoned friends, you will become their God.

Also the barbeque chicken sounds amazing too! I definitely want to try these sometime.

Used to make grilled sandwiches for myself at work all the time, my favorite was probably Turkey and Ham, with Jalapenos, melted White Cheddar Cheese, and Ranch Dressing.
Ah, I guess I should probably mention Pittsburgh sandwiches too, since I'm from pittsburgh and I fucking love them. Two slices of Italian bread, meat(i prefer steak or corned beef), tomato slices, coleslaw, and fries on the sandwich, sometimes with a fried egg on it as well.
