The first one you mentioned sounds absolutely amazing! Jalapenos are amazing with white cheddar cheese <3.
The pittsburgh sandwich maybee but without the fries and maybe easy on the coleslaw, unless it's super good coleslaw.

Hahahaha I usually just throw in whatever I've got in the fridge and toast it. Who knows, I could discover some amazing combination of flavours.
Other than that, when I'm actually determined to make a good toasted' I like adding sun dried tomatoes and spicy olives. For my cheese, I've experimented a bit and found Gouda to melt nicely and Feta added after its toasted to give it a creamier overall texture. For the meat, I buy bone ham (ham still on the bone, preferably with some fat still on it) and carve it myself. I find it tastes a hell of a lot better than the pre-sliced hams you find in packets at the supermarket. If I'm really craving meat, then I add Hungarian salami, the spicy kind, after its toasted (it gets really oily otherwise). For my bread, I generally use Turkish bread of a sort because it holds its shape well and holds a lot more fillings.
EDIT: By toasted I mean thrown in the oven.

I personally can really go to town with my sammiches. A simple chorizo and garlic cream cheese is good. But cause I tend to have access, almost always being close to the Asian food, Charsiu (Cantonese roast pork) Fish cakes, and bamboo shoots (a recipe from Air)

This is a childhood favorite of mine, fried bologna and cheese sandwich. Take and fry a couple slices of bologna in a pan put the slices on some bread with cheese! Can also toast the sandwich some more on the pan or in an oven afterwards.

Same, I just bought banana's last night too, so definitely going to pick up some peanut butter. Last night my boyfriend was like "I was wish we could make grilled pb& banana" <3 yum.

When i make a sandwich i typically grill it, except pb&&j, now I'm going to have to try that... Anyways my favorite still has to be the classic grilled cheese sandwich.

Also between the selection on the poll, I would have to pick Grilled Cheese. Do love me some of that gwilled cheese. (lol)
And as for making a sandwich of my own, I don't think it is something I made up, I was a making a grilled cheese one day and I thought I'd add some pizzazz (not really) to it. So I grilled a piece of chicken and just slapped it on the sammich. :\

You can also put pan fried bologna in standard grilled cheese and I think that's pretty tasty.
My favourite kind of grilled sandwich would be ham and cheese though, just because of how easy they are to make compared to how good they are.
