I only played the first, the second and the third GTA, but out of those the second was my favourite. I remember a mission where I took over a bus to gather people and bring them to a factory where they'd be processed into hamburgers, and I could watch how they're thrown into a drill by a conveyor belt... that was awesome. I also loved giving people direct facehits with a rocket launcher only to watch them be flown up to the camera. I feel like playing it again now. >_>

GTASA for me. It's simply the most evolved GTA, taking into account that I haven't played GTAIV. I love my RPGs, so I enjoyed the RPG elements in it. I liked the 2-player. I liked the pointless but cool shit like taking your driving test and pilots test. I like pretty much everything about it apart from the usual GTA complaints of subpar graphics (but then there's so fucking much going on) and countless hilarious glitches.

The whole flavour of Vice City is nice (Gotta love the 80's) but my favourite is San Andreas.

The only thing better than that is strafing the cops with a P-51 mustang or Av-8 Harrier! (Missiles in the case of the AV-8)
