are you not allowed to just come out and say that tosh went on to weekly shonen jump with "shokugeki no soma"? i mean, basically every western fan knows this anyway.

well, they're not exactly competing with shonen magazines (especially wsj who aims for ages ~ 13 to 16). it's understandable in the original japanese version if the publisher and/or the artist don't want his hentai past to be known (maybe because of worried parents of the young readers).
